Garlic Mayonnaise

"A wonderful creamy garlic multi-purpose mayonnaise that can be used for cooking or in sandwiches. Quite tasty!"

Ingredients :

• 6 cloves garlic
• 1/2 teaspoon sea salt
• 2 egg yolks
• 1 tablespoon white wine vinegar
• 1 1/4 cups olive oil

Instructions :

• Crush the garlic cloves with the salt into a paste using a mortar and pestle; transfer to a bowl. Stir the egg yolks and vinegar into the mashed garlic. Gradually whisk the olive oil into the mixture in small amounts until the mayonnaise is thick and glossy.
